- -1 tbsp mustard
- -2 tablespoons of any wine or vinegar
- -4 tbsp olive oil
- -1 teaspoon salt, plus more to taste
- -black pepper, to taste
- - 4 cups cooked or canned lentils
- -3 large ripe tomatoes
- -1 large cucumber, peeled, selected and sliced
- -1 cup chopped carrots
- -1 cup chopped celery
- -1/2 cup chopped red onion
- -1/4 cup chopped fresh parsley or dill

Step 1
Combine mustard, vinegar, oil, salt, and pepper in a large bowl with 2 tablespoons of water.
Step 2
Mix well all the mixture from step 1. Taste it, maybe add more salt and pepper.
Step 3
In the bowl from step 1, add all the vegetables and herbs. Mix well.
Step 4
