It is necessary

  • - 3 tbsp flour;
  • - 1 packet of dry yeast;
  • - 100 g of granulated sugar;
  • - 3 egg yolks;
  • - 100 g of butter;
  • - lemon zest;
  • - 1/2 tsp salt;
  • - 600 g of prunes, pitted;
  • - 1 tbsp strawberry or raspberry jam;
  • - zest of half a lemon;
  • - butter;
  • - 1 egg;
  • - grated crackers;
  • - 1-2 tbsp. granulated sugar.

Instructions

Step 1

Dissolve the yeast in warm water, add salt, yolks, granulated sugar, butter and finely grate the lemon zest. Mix well. Sift flour and add in small portions. Knead the dough, wrap it in a blanket and put it in a warm place for 2-3 hours to rise. Poke the dough with a knife to lower and leave to rise. So it rises twice.

Step 2

While the dough is rising, prepare the filling. Pour prunes with chilled water, bring to a boil over low heat, then leave to simmer for another 40 minutes. Let the berries dry and chop. Put the prunes in the jam, add the grated lemon zest, stir everything.

Step 3

Grease a baking dish with butter and sprinkle with breadcrumbs. Divide the dough into 2 parts - one larger and one smaller. Roll out about 7mm thick. Place the larger part in the mold so that the edges remain behind it. Spread the filling evenly over the entire dough.

Step 4

Cover the top of the pie with the rest of the dough, pinch the edges. Cover the cake, let it stand. Brush the top of the pie with a beaten egg and pierce in several places to release steam during baking.

Step 5

Preheat the oven to 200 degrees, put the pie in it. After 30 minutes, remove the cake, sprinkle with granulated sugar on top and send back to the oven for another 10 minutes.
