  • - lamb pulp - 800 g;
  • - dried apricots - 150 g;
  • - onions - 2 pcs.;
  • - garlic - 1 head;
  • - celery - 2 pcs;
  • - apricot jam - 100 g;
  • - dry white wine - 150 ml;
  • - lemon - 0.5 pcs.;
  • - olive oil - 3 tablespoons;
  • - curry - 1 tablespoon;
  • - ground red pepper - 1 tablespoon;
  • - black pepper and salt to taste.

Instructions

Step 1

Prepare the marinade. Peel the garlic, pass the cloves through a press. Mix the mixture with one spoonful of olive oil. Peel the onions and celery stalks and cut them into small pieces. Add to marinade.

Step 2

Heat a frying pan and fry the resulting paste over low heat until golden brown. Season everything with red and black pepper, add curry and salt. Pour in the wine and mix the mixture thoroughly.

Step 3

Evaporate the liquid by half of the entire volume. Then add jam. Squeeze the juice of half a lemon directly into the skillet and cook for about 20 minutes over low heat.

Step 4

Cut the lamb into 3-4 cm cubes. Place the meat in a deep bowl. Pour it over with chilled marinade and refrigerate for at least 4 hours to marinate.

Step 5

Cut dried apricots into 2 halves. String meat and dried apricots on skewers and fry on charcoal until tender, turning constantly.
