Today we are going to cook a very appetizing dish that can be tasty to feed the whole family. These will be juicy and mouth-watering stuffed eggplants. They are very easy to prepare.

It is necessary

  • eggplant - 15 pcs.
  • For minced meat:
  • rice - 1 glass
  • minced meat - 0.5 kg
  • greens (dill, parsley)
  • For tomato sauce:
  • bell pepper - 1pc.
  • carrots - 1pc.
  • onion - 1 pc.
  • tomatoes - 5-7 pcs. (medium size)
  • tomato paste - 2 tablespoons
  • sugar - 1 tbsp
  • salt - 0.5 tbsp.
  • sunflower oil - 50 gr.

Instructions

Step 1

Minced meat

Take 1 cup of rice, rinse with cold water until the water is clear, pour into boiling water and cook until half cooked. Next, you need to cool the rice, mix with 0.5 kilograms of minced meat, it is better to take pork and beef.

Add salt, pepper (to taste) and finely chopped herbs (dill, parsley, celery) to the mixture.

Step 2

Cooking tomato puree

Make mashed potatoes from fresh tomatoes. You need to take the tomatoes and pass them through a machine, juicer or ordinary grater, as you like. For 0.5 liters of puree, you need to add 30 grams (1 tablespoon) of sugar and 15 grams of salt (half a tablespoon). Add tomato paste (dilute 2 tablespoons in a glass of water). Mashed potatoes are boiled in a saucepan so that the volume is reduced by 1/3, at the end add a mixture of peppers (bitter, red, allspice) to taste.

Step 3

Cooking tomato sauce

You need to finely chop the Bulgarian pepper, fry it lightly in sunflower oil, add grated carrots and onions to it on a coarse grater. Fry everything until golden brown and pour over tomato puree. Put out for 2-3 minutes.

Step 4

For this dish, we need medium-sized, not overripe fruits, because overripe eggplant tastes bitter. First, you need to pour cold water and leave for 20 minutes, then you need to wash them thoroughly, cut off both ends, cut along to the center.

Step 5

Next, the eggplants are fried in vegetable oil (you can stuff not fried eggplants, but blanched ones, i.e. dip them in boiling water for 5 minutes).

Step 6

Then you need to cool and stuff. You need to stuff the minced meat tightly enough, but carefully so as not to break them. Stuffed eggplant should be folded tightly into a saucepan. Pour in tomato sauce, then add water to cover all the eggplants and simmer for 30 minutes over low heat (after boiling). Bon Appetit!
