Baked zucchini is a simple dish that cooks quickly. Chilled zucchini is also delicious, but after cooling, the breading will no longer crunch. It is better not to bake them for a long time, they should crunch a little and remain juicy.
It is necessary
- - 3 zucchini or zucchini;
- - 120 g bread crumbs;
- - 100 g of hard cheese;
- - 2 eggs;
- - 3 cloves of garlic;
- - a pinch of Italian herbs, salt, black pepper, vegetable oil.
Instructions
Step 1
Wash the zucchini, wipe it off, cut into slices about 1.5 cm thick, then into cubes. If the zucchini has a thick skin, peel them first.
Step 2
Beat two eggs into a bowl, add chopped garlic clove, beat with a fork. If desired, grind the garlic gruel with a pinch of salt. Rub the cheese on a fine grater, the finer it is, the better it will stick to the squash cubes.
Step 3
Separately mix the breadcrumbs with herbs, salt, pepper, grated cheese, and stir until smooth.
Step 4
Line a baking sheet with parchment paper, brush it with a little vegetable oil. Dip the squash cubes in the egg, shake off the excess, dip in the breading on all sides, put on a baking sheet in one layer. Sprinkle with olive oil on top. Place the baking sheet on the topmost rack of the 200-degree oven.
Step 5
Cook the zucchini for 10-15 minutes, then serve them directly on the table.
