No special secrets: good meat, roots, white potatoes and certainly greens. But how delicious! And if you add half an egg to a plate with such a soup, then be prepared for requests for more.
It is necessary
- - 1 kg of beef on the bone;
- - 2 onions;
- - half a celery root;
- - 1 carrot;
- - 2 table. tablespoons of sunflower oil;
- - 500 g of potatoes;
- - 70 g of parsley;
- - salt;
- - ground black pepper.
Instructions
Step 1
Wash the meat, add 3 liters of water and bring to a boil. Remove the foam, put 1 washed unpeeled onion, 1/4 celery root and cook for 2 hours.
Step 2
Strain the cooked broth through a sieve. Chop the meat and put it in a bowl or saucepan with a little broth.
Step 3
Peel and chop the remaining onion. Peel the celery root quarter and cut into thin strips. Grate carrots on a coarse grater.
Step 4
Heat oil in a frying pan and brown the prepared vegetables. Scald the tomatoes with boiling water, remove the peel, chop finely, add to the vegetables and simmer under the lid for 10 minutes.
Step 5
Bring the broth to a boil. Salt a little. Peel potatoes and cut into small cubes. Put in broth and cook for 15 minutes.
Step 6
Add stewed vegetables to the broth and cook for 5 minutes. Season a little more with salt and pepper. Chop the greens. Pour the soup into bowls, put meat and herbs in each.
