Vitamin and aromatic soup. It is so thick that it can be served as a second course. Garlic, mint and cilantro add a fresh flavor to this soup.
It is necessary
- - 1.5 liters of fatty yogurt;
- - 500 g minced meat with onions;
- - 2 bunches of cilantro;
- - 2 bunches of mint;
- - 1 bunch of green onions;
- - 1 bunch of green garlic;
- - 1/4 cup rice;
- - 1 egg;
- - 3 tbsp. spoons of rice flour;
- - vegetable oil, nutmeg, turmeric, pepper, salt.
Instructions
Step 1
Wash green onions and garlic, mint, cilantro. Chop the herbs for the soup. Do not reduce the amount of greens - this makes the soup much tastier.
Step 2
Minced meat can be any - chicken, pork, beef, but always with the addition of onions. Additionally, add nutmeg, turmeric, salt and pepper to the minced meat. Form small meatballs, fry them until tender in vegetable oil. Set aside for now, we will need the meatballs a little later.
Step 3
Beat the egg with a mixer until it doubles in volume, add the indicated amount of fatty yogurt, pour in 1 liter of plain water, beat everything thoroughly. Add rice flour, rice while whisking. Season with salt to taste.
Step 4
Put a saucepan with yoghurt mass on medium heat, cook until the rice is cooked (about 20-30 minutes, stirring with a wooden spoon (along the bottom of the saucepan in one direction!).
Step 5
Add all the greens to the pan, let it boil, cook for 3 minutes until the greens are soft. The soup will immediately acquire a pleasant aroma.
Step 6
Serve the thick yogurt soup hot by adding the fried meatballs or serving them separately to the soup. This soup is not stored for a long time, do not cook it with a margin.
