Step 1

Prepare a yeast dough for the whites. Mix one egg, 500 ml milk or kefir if desired. Then add 5-7 g of dry yeast, pour 20-30 ml of water and let it brew for 5-7 minutes. Add salt, sugar 2 tablespoons. and 2 kg of flour. Mix all ingredients thoroughly, preferably with a mixer. Let the dough rise. The dough is ready.

You can also use purchased dough, but then the whites will not turn out so lush.

Step 2

Make homemade minced meat. To do this, you need to scroll 500 g of meat in a meat grinder in the proportions of pork 30%, beef 70%. Then add the onion (300-500 g) scrolled in a meat grinder, the more onion, the better. You also need to add salt, pepper, spices to your liking. Minced meat is ready.

Also, minced meat can be made not only from pork and beef, but veal can be used. Salt, onion, pepper and spices are added in the same amount as in minced pork and beef.

Step 3

When the homemade minced meat and dough are ready, proceed to the direct preparation of the whites. Sprinkle flour on the table in a thick layer. Cut the dough into pieces for the whites, dip them generously in flour so that it is convenient to work with them. Roll each such piece of dough into a cake and add minced meat for the whites inside. Thoroughly stick the minced meat inside the tortilla. Set aside, let them rise for 20-30 minutes in a warm place.

Step 4

Put the skillet on fire. Add vegetable oil to the skillet and heat it to operating temperature (about 170 degrees). Fry the homemade whites one by one over medium heat. Typical cooking time is 15 minutes. Serve immediately 2–3 whites per serving.
