Croquettes are small cutlets, for the preparation of which various fillings are used (meat, vegetables, minced meat). Croquettes differ from traditional cutlets in that the formed balls are dipped in a beaten egg and rolled in breadcrumbs before frying. The dish is tender on the inside and crispy on the outside.
Ingredients for 30-35 croquettes:
- 12 large shrimps (preferably fresh);
- 8-10 squid rings;
- 2 tablespoons of tomato sauce;
- half an onion;
- 2 tablespoons of oil (olive or vegetable);
- a teaspoon of smoked paprika (you can use regular paprika - it is needed for a beautiful color of the dish);
- 3 spoons of flour;
- 500 ml of milk;
- 1 egg;
- bread crumbs;
- fresh parsley;
- salt to taste.
Croquettes - recipe for cooking
First you need to prepare all the ingredients. Peel shrimp and squid, cut into small pieces. Peel the onion, cut into cubes. Chop the parsley.
Heat oil (olive or vegetable) in a frying pan, fry the onion until a beautiful golden color.
Then add shrimp and squid, fry until the seafood is done over medium heat.
Add tomato sauce and paprika (smoked or plain).
Pour flour into the pan, mix all the ingredients and pour in the milk. Stir again, add chopped parsley, leave on low heat to thicken the sauce.
Next, you need to transfer the seafood with the sauce to another dish, let it cool to room temperature and put it in the refrigerator until it cools completely.
When the mass has cooled down, you can form small croquettes from it, dip them in a pre-beaten egg and roll in breadcrumbs. You need to fry croquettes in a sufficient amount of olive oil on both sides to form an appetizing crust.
