Ingredients:

For the test:

  • 2 egg yolks
  • 250 g butter (bring to room temperature),
  • 75 gr. powdered sugar
  • 500 gr. flour
  • 3 tbsp. l. water.

For filling:

  • 1 egg,
  • fig jam, if not, another will do (figs are best combined with black currants),
  • fresh figs.

Preparation

  1. First you need to mix two loose ingredients - flour and powdered sugar, then sift everything together through a sieve, no lumps can be left.
  2. You need to add oil to the sifted mixture and rub everything well with your hands, with a spoon or fork, whichever is more convenient for you, the main thing is that everything is well and evenly mixed.
  3. Next, add the yolks to the mixture and mix everything again until smooth, wrap with cling film and cool for 40 minutes in the refrigerator for the oil to take.
  4. Preheat the oven to 180 ° and prepare the shortbread base. The cooled dough can be rolled out approximately along the diameter of the mold, or you can simply distribute it over the shape with your fingers so that the sides are about two and a half centimeters each, the dough crumbles a little, but this does not interfere with modeling at all. It is advisable to prepare a baking dish with low sides. In the dough on the bottom of the baking dish, make holes with a fork in several places so that bubbles do not form later.
  5. Now you can send the dough to the oven, it will be enough for 10 minutes.
  6. You need to get the dough out of the oven and grease it with a beaten (no foam) egg, then add a few spoons of jam, as much as needed to cover the bottom of the sandy blank.
  7. Cut the figs, cut into quarters will look more beautiful, but in general it's a matter of taste, put it in a mold and pour a little jam.
  8. Send the cake to the oven for twenty minutes.

It is better to let such a cake cool thoroughly before use, so the filling will hold well and it will be easy to cut it into portioned pieces. If you bake a pie with fig jam, then it will taste very pleasant and unique, but any other jam will not spoil it.
