Prepare the dough. Combine sugar and honey, add 1/4 cup water, stir and bring to a boil. Pour flour into hot syrup, stir quickly to get a thick mass.

Remove from heat and let cool. Next, put softened butter in the honey mixture. Mix baking soda with 1 tablespoon of flour and add to the dough, add grated lemon zest.

Knead everything well. The dough should be soft. Roll the gingerbread dough into a 1 cm thick layer, cut out butterflies from it and place them on a baking sheet greased with vegetable oil.
