Add the yolks to the butter, grated with sugar and beat with a blender. Gently combine the mixture with whipped egg whites and grated ginger so that it remains fluffy. Now add dry ingredients. Add flour, cocoa, cinnamon and baking powder. Stir with a spatula until no lumps remain.
Step 3
Let the dough stand for 5 minutes. Line a baking sheet with baking paper. Spoon the cookie mass onto a baking sheet with a tablespoon. Cook for 15-20 minutes at 170 ° C. Serve the cookies cold. Black tea with thyme or mint goes well with it.
