An apple custard pie is perfect for a festive Easter table when, after a long fast, greasy biscuit cakes are too heavy for the stomach.
It is necessary
- For the test:
- - flour - 2, 5 glasses
- - sugar - 3/4 - 1 glass
- - salt - 0.5 tsp
- - ground cinnamon - 1 tsp
- - burnt sugar - 1 tablespoon (for color, optional)
- - kefir 1 - 2, 5% - 500 ml
- - soda - 1 tsp.
- For filling:
- - apple - 2 pcs.
- - sugar - 4 tablespoons
- For the cream:
- - flour - 1/3 cup
- - milk - 3/4 cup
- - sugar - to taste
- - butter - 1 tablespoon
Instructions
Step 1
To make apple pie with custard, take kefir, yogurt or low-fat curdled milk up to 2.5%. If the fat content of kefir is, for example, 3.2%, then take 300 ml of kefir and 200 ml of water, instead of 500 ml of pure kefir. Pour the fermented milk product into a bowl and heat slightly, put soda in a warm liquid and stir. The result is a thick foam.
Add granulated sugar, stir, add salt, flour, add cinnamon and burnt sugar (liquid) if desired. You will get a thick dough.
Step 2
Take a mold with a diameter of 24 - 26 cm, grease with oil. Preheat the oven to 180 degrees. Place apples, peeled and cut into random pieces, on the bottom of the mold. Sprinkle with sugar. This is the filling of apple pie.
Pour the dough over the filling, smooth and place the mold in a hot oven for 40 minutes if the mold is made of silicone, or 30 minutes if the mold is metal. Turn the finished cake onto a metal sheet.
Step 3
While the pie is baking, prepare the custard. To do this, take milk of any fat content, add sugar and flour to it, stir so that there are no lumps. Simmer the mixture over low heat until thickened. Remove from heat and add butter. Whisk slightly.
Put the custard in a layer on the pie, put in a hot oven, if possible, turn on the grill mode to form a toasted crust. If there is no such regime, just hold it in a hot oven to dry the top of the cream.
The cake is served warm or cold.
