The name of the Italian dessert based on mascorpone cheese "Tiramisu" comes from the word "tiramisù", which means "lift me up". And, really, having tasted this incredibly tender and airy dessert, you feel like "in heaven".
It is necessary
- For the cream:
- - 500 g mascarpone cheese;
- - 100 g of sugar;
- - 4 eggs;
- - 350 ml of coffee;
- - 3 tbsp. cognac;
- - cocoa powder.
- For the test:
- - 2 eggs;
- - 50 g of sugar;
- - 1 bag of vanilla sugar;
- - 50 g flour;
- - 30 g starch;
- - 1 teaspoon baking powder.
Instructions
Step 1
Make cheese cream. To do this, separate the yolks from the whites. Mash the egg yolks thoroughly with sugar. Add mascorpone to the mass and mix. Whisk the whites into a strong foam and gently add them to the curd.
Step 2
Prepare biscuit sticks. Beat the eggs and sugar, add the vanilla sugar to the mixture and beat the mixture again. Add baking powder and starch to the flour. To make the dessert truly airy, sift the flour and starch mixture through a sieve.
Step 3
Add flour to the egg mass and mix. Place the dough in a pastry bag. Grease a baking sheet with butter or margarine, sprinkle with flour and place the strips of dough on it.
Step 4
Preheat the oven to 200 degrees and bake the biscuit sticks in it for 10-15 minutes. Cool the finished cookies.
Step 5
Mix cold coffee and cognac. You can also use another alcoholic beverage, such as liqueur. It all depends on your preference. Dip the biscuit cookies in the coffee and cognac mixture. Movements should be quick, sticks should not get wet.
Step 6
Place the biscuit sticks in a mold tightly to each other and spread all with cheese cream. Then lay in another layer of cookies and spread out the rest of the cream. Smooth out the mass. Place the mold in the refrigerator for about 5-6 hours. Sprinkle the finished dessert with cocoa powder through a strainer. Cut carefully into portions.
