A distinctive feature of Italian cuisine is the unusual combination of ingredients. The "Edegra" salad is a vivid confirmation of this. The combination of pumpkin, red beans and goat cheese will please even true gourmets.
It is necessary
- - 400 g red beans
- - olive oil
- - balsamic vinegar
- - 400 g pumpkin
- - thyme
- - salt
- - ground black pepper
- - grain mustard
- - cumin
Instructions
Step 1
Cut the pumpkin pulp into cubes, lightly salt and add a small amount of thyme. Put the workpiece in the oven for 15-20 minutes.
Step 2
In a separate bowl, prepare a mixture of honey, grain mustard, black pepper, salt and olive oil. The proportions can be selected at your discretion.
Step 3
Combine prepared pumpkin cubes and canned red beans in a salad bowl. Fill the workpiece with the honey mixture. Roll the goat cheese into balls or cut into cubes. You should not mix cheese with the main salad, just lay it on top.
Step 4
Arrange the lettuce leaves in an even layer on a plate. Place the seasoned mixture on top. Before serving, the dish can be lightly sprinkled with caraway seeds or garnished with fresh herbs. You can change the taste of the salad thanks to a little pumpkin experiments. For example, if the pumpkin pulp is not baked in the oven, but fried in olive oil or grilled. In this case, the salad is best served warm.
