- To prepare this dish for 4 servings, you will need:
- 350 g asparagus,
- 600 g salmon fillet,
- 2-3 st. l. olive oil,
- 1 lemon
- 2-3 sprigs of basil,
- salt pepper,
- for sun-dried tomatoes:
- 4-5 tomatoes,
- 1-2 sprigs of thyme,
- 2 tbsp. l. olive oil,
- salt pepper.
Instructions
Step 1
Prepare sun-dried tomatoes.
Cut the tomatoes in half. Remove the cores with a spoon.
Step 2
Place the tomato halves, skin side down, on a parchment-lined baking sheet.
Season with salt, pepper, sprinkle with thyme leaves, drizzle with olive oil. Bake for about 30 minutes at 150 ° C.
Step 3
Peel the asparagus and cook in salted water for 2-3 minutes. Cut the salmon fillet across into 4 equal parts.
Step 4
Fry the fish on both sides in a hot skillet with olive oil for 3-4 minutes. Season with salt and pepper.
Step 5
On a baking sheet lined with parchment, place asparagus, sun-dried tomatoes and lightly salt. Place the fried salmon on top, sprinkle with lemon juice and cook in the oven at 180-190 degrees, about 15 minutes.
Serve garnished with basil leaves.
