Chickpea salad with olives and cherry is prepared quickly by itself, only the chickpeas must first be soaked overnight. Olives go well with cherry tomatoes, and the salad dressing is made with cucumber, lemon and low-fat yogurt.
It is necessary
- For the salad:
- - 200 g chickpeas;
- - 8 cherry tomatoes;
- - half a cucumber;
- - 1 stalk of celery;
- - a handful of pitted olives;
- - a handful of basil and mint.
- For refueling:
- - 1 lemon;
- - half a cucumber;
- - a bunch of fresh oregano;
- - 4 tbsp. tablespoons of low-fat yogurt;
- - 1 tbsp. a spoonful of olive oil;
- - a pinch of black pepper and salt.
Instructions
Step 1
Soak the chickpeas overnight, then boil until tender without adding salt. Rinse the celery stalk and chop finely. Cut half of the cucumber into small cubes. If the cucumber is too watery, remove all seeds from it.

Wash the cherry tomatoes, cut into 4 pieces. Cut the olives into smaller pieces. Tear fresh mint and basil with your hands. Peel the second half of the cucumber, rub on a fine grater. Chop the oregano finely. Remove the zest from the lemon, rub it on a fine grater, squeeze 1 teaspoon of juice from the lemon.

Put boiled chickpeas, cucumber, cherry tomatoes, celery, olives in a salad bowl, add basil and mint.
