Step 1

After melting the butter in a water bath, add 150 grams of granulated sugar and egg yolks to it. Stir the mixture thoroughly until smooth, then beat well. Then add buckwheat flour there. Knead a thick but soft dough.

Whisking the egg whites in a separate bowl, gradually add 50 grams of granulated sugar to them. This will create a stable white foam. Add it in small portions to the dough, while stirring continuously. This is necessary in order to preserve the airiness of the protein mass.

Cover the baking sheet with a sheet of parchment and spread the resulting mass on it in an even layer. In this form, send the future cake to bake in the oven, heating it to 190 degrees, for about half an hour.

In the meantime, prepare the filling for the buckwheat dessert. Pour the gelatin into a separate bowl and fill it with water. Leave it to swell for 10 minutes, then combine with the curd-creamy mass. Add the remains of granulated sugar, as well as powdered sugar and vanillin there. Mix everything properly and heat on the stove until the gelatin is completely dissolved. When this happens, place the filling in the refrigerator for about 30-40 minutes. This is necessary for its solidification.
