Pai is a French dessert with an incredibly exquisite taste. Our hostesses got to know this dessert relatively recently, but it quickly became a favorite delicacy of many. There are many options for making dessert, few people will not like curd pie with a delicate apricot layer and airy meringue.
It is necessary
- - 500 g of cottage cheese;
- - a glass of corn flour;
- - a glass of sugar;
- - 3 eggs;
- - 5 tbsp. spoons of apricot jam or jam;
- - butter;
- - lemon juice, vanillin.
Instructions
Step 1
Separate the yolks from the whites. Mix the yolks with sugar and cottage cheese, beat, add vanillin to taste. Add cornmeal and knead the dough.
Step 2
Coat the mold with butter or vegetable oil, put the dough into it, smooth it out. Bake the crust until golden brown in an oven preheated to 200 degrees.
Step 3
Mix cold proteins with 1 tbsp. spoon of lemon juice, add a little sugar, beat until stiff peaks appear.
Step 4
Make the apricot jam homogeneous (you can use a blender), if you have it very liquid, then add 1 tbsp. a spoonful of starch, bring to a boil so that the jam becomes thicker. Put the jam on the cake.
Step 5
Transfer the whipped egg whites to a pastry bag, dotted across the entire surface of the cake. Put in the oven, dry the meringue until its characteristic ruddy color at 150 degrees (about half an hour). During this time, try not to open the oven, otherwise the meringue may fall, it will no longer be airy. Above 150 degrees, you cannot warm up the oven for meringue - such a temperature will burn the tender meringue.
Step 6
Remove the finished curd pie from the mold, serve with tea.
