Instructions
Step 1
Put the champignons in water for half an hour. Chop finely onions, cloves of garlic and place in a frying pan drizzled with olive oil, add coarsely chopped carrots and mushrooms, fry until golden brown, for 10 minutes. Sprinkle everything with finely chopped parsley.
Step 2
Soak oats in a bowl of water until softened, then drain the liquid to the last drop. Add boiled rice, a little caraway seeds, egg yolk to the oats, pour over everything with soy sauce, sprinkle with breadcrumbs. Stir vegetables and crackers, chill in the refrigerator for 10 minutes.
Step 3
Rub a drop of oil on your hands and sculpt burgers from the vegetable mixture. Dip them in breadcrumbs and fry in a pan drizzled with olive oil (the fire should not be strong, otherwise the crackers will burn).
Step 4
For the salad, peel the orange, divide into wedges and place in a cup. Add chopped mushrooms, arugula, celery. Season salad with pepper, salt, olive oil.
Step 5
Serve oat burgers on a flat plate with orange and mushroom salad. Decorate everything with a sprig of parsley. Bon Appetit!
