Pies with onions and eggs are traditionally prepared in Russia with the end of the fast and the appearance of the first greens. The pungent taste of onion greens is softened by chopped egg and vegetable oil. The filling turns out to be juicy and unusually tasty. As a rule, yeast dough is used for pies. Products can be baked in the oven or deep-fried.

- For the test:
- 3.5-4 cups wheat flour
- 1.5 cups water or milk
- 4 tbsp. l. vegetable oil or margarine
- 1 egg
- 1 tbsp. tablespoons of granulated sugar
- 20 g fresh yeast or 7 g dry
- ½ tsp salt
- For filling:
- 4 eggs
- 300 g green onions
- 4 tbsp. tablespoons of vegetable oil
- a pinch of salt
- 50 g butter for greasing pies

Step 1
Heat the milk to 30-35 degrees.
Step 2
Dissolve sugar in milk and add yeast.
Step 3
Leave the mixture on for 10 minutes.
Step 4
Beat eggs lightly.
Step 5
Melt the spread.
Step 6
Sift flour, add spread, yolks, yeast with milk, salt to it and knead the dough.
Step 7
Cover the dough with a towel and place in a warm place to rest for 1.5 hours.
Step 8
Set aside the risen dough, and set to rise for another 1 hour.
Step 9
Prepare the filling. To do this, boil the hard-boiled eggs and refrigerate.
Step 10
Finely chop the eggs and green onions.
Step 11
Mix onion and eggs, add oil and salt.

Roll out the finished dough and shape for pies.

Put a tablespoon of the filling on the dough piece and pinch the edges of the cake, forming a pie.

Place the patties on a greased baking sheet and, covered with a towel, place in a warm place to rest for 1 hour.
Step 15
Bake the risen pies in the oven at 180 degrees for 35-40 minutes.
Step 16
Take out the finished pies, brush with butter and put on a dish.
