  • - 1 tablespoon of black peppercorns;
  • - 1 teaspoon sweet red pepper;
  • - 1 glass of white wine;
  • 1/2 cup vinegar
  • - parsley;
  • - salt;
  • - pepper.

Instructions

Step 1

In order to cook rabbit meat in the marinade, you need to boil the broth. To do this, coarsely chop the celery, leek stalks and carrots. Take a saucepan, pour 1.5 liters of water into it, add chopped vegetables, as well as chicken bones, bring the broth to a boil and cook for 35-40 minutes, periodically skimming off the foam. Strain the resulting broth through a fine sieve, then put it in the refrigerator for two hours.

Take rabbit meat and rinse it thoroughly under running water. Cut it into equal medium sized pieces, sprinkle well with salt and black pepper.

Take a saucepan and pour 4 tablespoons of olive oil into it, put the chopped meat on it and fry the pieces for 5 minutes. Place the rabbit in a serving dish and set aside.

Leave the broth to boil until it boils down to half, then add vinegar and boil for a few more seconds over medium heat.

Place lightly browned rabbit slices in a saucepan and cook over medium heat for an hour. When the rabbit is tender, turn off the heat and cool slightly.
