It is necessary

  • - bones of one chicken;
  • - a sprig of celery;
  • - 2 onions;
  • - 1.5 liters of water;
  • - 1.5 kilograms of rabbit meat;
  • - 4 tablespoons of olive oil;
  • - 6 cloves of garlic;
  • - 2 carrots;
  • - a sprig of thyme;
  • - 1 bay leaf;
  • - 1 tablespoon of black peppercorns;
  • - 1 teaspoon sweet red pepper;
  • - 1 glass of white wine;
  • 1/2 cup vinegar
  • - parsley;
  • - salt;
  • - pepper.

Instructions

Step 1

In order to cook rabbit meat in the marinade, you need to boil the broth. To do this, coarsely chop the celery, leek stalks and carrots. Take a saucepan, pour 1.5 liters of water into it, add chopped vegetables, as well as chicken bones, bring the broth to a boil and cook for 35-40 minutes, periodically skimming off the foam. Strain the resulting broth through a fine sieve, then put it in the refrigerator for two hours.

Step 2

Take rabbit meat and rinse it thoroughly under running water. Cut it into equal medium sized pieces, sprinkle well with salt and black pepper.

Step 3

Take a saucepan and pour 4 tablespoons of olive oil into it, put the chopped meat on it and fry the pieces for 5 minutes. Place the rabbit in a serving dish and set aside.

Step 4

Peel, wash and dry garlic, onions and carrots. Next, cut the carrots into 1 centimeter thick slices, chop the onion and chop the garlic. Put the vegetables in a saucepan, add a sprig of thyme, bay leaf, a tablespoon of black peppercorns to them, fry the vegetables over moderate heat.

Step 5

Add sweet red pepper to the ingredients, stir, then pour white wine to vegetables and spices. Leave the wine to boil for three minutes, then pour the cooked broth into the saucepan. Leave the broth to boil until it boils down to half, then add vinegar and boil for a few more seconds over medium heat.

Step 6

Place lightly browned rabbit slices in a saucepan and cook over medium heat for an hour. When the rabbit is tender, turn off the heat and cool slightly.

Step 7

The marinated rabbit is ready! Garnish with a little parsley before serving.
