Sponge cake with apples is an elementary and always a win-win dish. The tenderness of the airy dough and the sweet and sour juiciness of fruit are amazingly combined in these pastries, suitable for both everyday and festive tea drinking. Try to make it according to a simple recipe or make an original "pink bouquet".
Sponge cake with apples: a simple recipe
Ingredients:
- 5 medium apples;
- 4 chicken eggs;
- 250 g of sugar;
- 250 g flour;
- 0.5 tsp soda;
- 2 tsp table vinegar;
- a pinch of salt;
- vegetable oil;
- icing sugar.
Beat eggs with a pinch of salt with a mixer on medium speed until first foam forms. Then add sugar there in small portions and continue beating the mass until it is completely dissolved. Quench the baking soda with vinegar in a tablespoon, add to the sweet egg mixture and gradually add flour into it while stirring continuously.
For apple pie, take fruits of a sour or sweet and sour variety, for example, Antonovka, Semerenko, Melba, white filling.
Grease a baking dish or baking sheet with vegetable oil and sprinkle with flour. Pour the dough into a bowl and distribute it evenly. Peel the apples, cut the cores and cut the flesh into thin longitudinal wedges. Lay them in even rows on top of the flour mass.
Preheat oven to 200oC and place a baking sheet in it. Bake the apple pie in 35-40 minutes. Do not open the oven door for at least the first 15 minutes so that the biscuit does not fall off. After cooking, let the baked goods cool for 1-2 hours and only then put on a dish and sprinkle with powdered sugar through a fine sieve.
Apple sponge cake "Pink bouquet"
Ingredients:
- 4 large red apples;
- 300 g of sugar;
- 1 tbsp. water;
- 4 chicken eggs;
- 100 g of butter;
- 2 tbsp. cream.
- 170 g wheat flour;
- 1 tsp baking powder;
- 2 tbsp. almond flour;
Cut 3 apples into halves, peel the middle and cut the fruit into thin semicircles without removing the skin. Pour half a serving of sugar with water and heat in a saucepan until the grains disappear. Dip the apple slices gently in the boiling syrup and simmer for 1 minute. Lay them out on a tray, dry a little and make roses, rolling 5-6 "petals" into a bud. Pierce them with toothpicks to keep them from falling apart, and set aside for now.
Instead of almond flour, you can take a handful of nuts, dry in the oven and grind in a mortar or coffee grinder.
Mash the remaining sugar with softened butter, cream and eggs, pouring in one at a time. Place almond and wheat flour mixed with baking powder into the sweet mass. Stir in the chopped fourth apple.
Line the round shape with parchment paper. Oil it and cover with biscuit dough. "Plant" fruit roses on top close to each other, not forgetting to remove toothpicks from them. Bake an apple cake at 190oC in 40-45 minutes.
