In Russia, vegetable soup was most often cooked in thick meat broth with the addition of mushrooms, and sometimes with homemade noodles. Today, many options for meat vegetable soup have appeared, in particular, the recipe for vegetable soup based on chicken broth with noodles has become widespread.
It is necessary
- - 1 liter of water,
- - 1 chicken back,
- - 100 g of champignons,
- - 100 g of vermicelli (stars, rings, etc.),
- - a stalk of leeks,
- - onion,
- - 1 PC. red bell pepper,
- - 5 tbsp. soy sauce,
- - 1 tsp fresh grated ginger root,
- - 6 tbsp. sunflower oil,
- - salt.
Instructions
Step 1
For the broth, cook the chicken back until cooked through. Carefully remove the foam formed during cooking with a slotted spoon. Remove the chicken back from the broth. Vegetable soup broth will turn out to be tasty and fragrant only if you let it boil gradually by putting the pan on low heat.
Step 2
Cut the champignons for vegetable soup into long strips. Chop the leeks, onions and bell peppers and cut them into squares.
Step 3
So, all the ingredients for the vegetable soup are ready, now heat the vegetable oil in a pan and put the mushrooms, onions, leeks and peppers in it. Do not fry, but simmer the contents of the pan under the lid for 5-7 minutes.
Step 4
Pour half a liter of chicken broth into the pan with the components of the future vegetable soup, add the noodles, grated ginger and soy sauce. Wait for the vermicelli to boil and cook. Remove vegetable soup from heat and serve with finely chopped herbs.
