Step 1
Chill the butter, then cut into equal cubes. Combine sugar with flour and add butter, then grind well until crumbs. Put the dough in the refrigerator for 15-20 minutes.

Roll the chilled dough into a circle and place in a baking dish pre-moistened with cold water. Bake the crust for about 15 minutes at 180 degrees. Its color should turn golden brown.

Whisk the cream into a strong foam. Add the Mascarpone cheese and stir well. Then add the lemon zest, icing sugar and beat with a mixer on high speed. You should get a uniform fluffy consistency.
Step 4
Wash strawberries, currants and raspberries, pat dry with a paper towel. Cut the strawberries into wedges.
