Cashews are exotic and delicious nuts. They can be used as a snack, added to pastries, or used in main dishes. A very successful combination would be rice with cashew nuts and a little dried fruit.
It is necessary
- Ingredients for 6 persons:
- - 2 tablespoons of butter;
- - a clove of garlic;
- - half a teaspoon of turmeric and cumin;
- 1/4 teaspoon ground cinnamon
- - 400 g of Jasmine rice;
- - 700 ml of water;
- - 60 g cashews;
- - 30 g raisins (you can use dried cranberries or apricot pieces);
- - salt to taste;
- - Bay leaf;
- - a few sprigs of cilantro (optional).
Instructions
Step 1
In a saucepan with a thick bottom, melt the butter over low heat, add the squeezed garlic, turmeric, cinnamon and cumin. Fry for 2 minutes, stirring occasionally.
Step 2
Pour rice into a saucepan, increase the heat to medium, stir the rice with oil so that it absorbs the aromas. After 2 minutes add cashews, raisins and bay leaves. Pour in water, add salt and quickly mix all the ingredients.
Step 3
We close the pan with a lid, increase the heat to maximum. As soon as the water boils, reduce the heat to the minimum value again. After 20 minutes, the rice will be ready, but it will need to stand for another 15 minutes before serving. Decorate the finished dish with finely chopped cilantro.
