The basis for gouges is choux pastry. It's easy enough to cook them, and they taste great. An excellent version of the original pastries for tea.

- - 265 ml of milk;
- - 110 g butter;
- - 175 g flour;
- - 6 eggs;
- - 185 g of cheese;
- - salt;
- - 35 g of nutmegs;
- - black pepper.
Instructions
Step 1
Cut the cheese into small pieces.
Step 2
Prepare the choux pastry. To do this, put butter in a saucepan, add salt, nutmeg, pour warm water.
Step 3
Boil water over low heat, add black pepper, heat until all the butter has melted.
Step 4
Then turn off the heat and gradually add flour. Stir constantly.
Step 5
Put the pan on the fire again and heat, stirring occasionally, until the dough turns into a homogeneous mass, lagging behind the sides of the pan. Turn off the fire.
Step 6
Pour the dough into a deep bowl and beat in 4 eggs one by one. Beat thoroughly with a mixer.
Step 7
Place the diced cheese into the dough.
Step 8
Place the baking parchment on a baking sheet, then use two teaspoons to transfer the dough to it in the form of small balls. Grease the resulting balls with a beaten egg, lightly sprinkle with sesame seeds on top and bake in a well-preheated oven for about 17 minutes, then reduce heat and continue baking gougeres for another 20 minutes.

Remove the finished gougères and cool directly on the baking sheet.
