It is necessary

    • For the test:
    • 250 g flour;
    • 120 g butter;
    • 1 egg;
    • 0.25 teaspoon salt;
    • 30 g vanilla sugar.
    • For cream;
    • 1 glass of milk;
    • 1 egg;
    • vanillin on the tip of a knife;
    • 7 teaspoons of sugar;
    • 2 tablespoons flour.
    • For filling and decoration:
    • 300 g cherries;
    • 2 tablespoons of cherry jam;
    • powdered sugar;
    • fresh mint.

Step 1

Cakes can be made from commercial dough, but homemade cakes are much tastier. Cut the butter into slices, add flour, vanilla sugar, egg and some salt. Pound all ingredients with a spatula or mix with a mixer using a dough attachment.

Step 2

Grease ceramic or metal basket molds with oil. Silicone molds do not need to be lubricated. Place a piece of dough in each and spread it over the bottom and sides in an even layer. Work quickly - the dough melts in warm hands. After filling out the forms, put them in the refrigerator for half an hour.

Step 3

Remove the baskets and place them on a baking sheet. Cut out squares from parchment paper, arrange them in forms. Top with dry beans or peas. This technique will help keep the walls and bottom of the baskets thin. Place the baking sheet in a preheated oven and bake the cakes until tender. They should take on a golden color. Remove the finished baskets from the oven, remove from the molds and refrigerate.

Make a custard milk tartlet cream. Pour milk into a bowl, heat it in the microwave or on the stove. In a saucepan, grind an egg with sugar and vanilla. Add two tablespoons of flour, stir the mixture thoroughly and pour the warm milk into it. Heat the mass until thickened, stirring constantly. Remove the saucepan from heat and refrigerate the finished cream.

Select large, undamaged cherries, remove the tails. Rinse the cherries thoroughly with running water and dry. You can use whole berries or remove seeds from them beforehand.

Step 6

Place some cherry jam on the bottom of each tartlet and carefully spread it over the bottom and sides. Fill the cakes with cream and carefully place the cherries on top. Place ready-made cakes on a platter. If desired, they can be lightly sprinkled with powdered sugar or garnished with fresh mint leaves.
