Yoghurt muffins with cherry marinated in port are a delicate delicacy that is both simple and elegant at the same time. Any tea party with such muffins will go off with a bang, for sure you will resort to this recipe more than once.

It is necessary

  • For 12 muffins:
  • - 400 g creamy yogurt;
  • - 125 g sugar;
  • - 50 g butter;
  • - 50 g of oatmeal;
  • - 50 ml of port wine;
  • - 40 g starch;
  • - 2 eggs;
  • - 1 pack of vanilla sugar;
  • - 2 tbsp. spoons of cocoa and sugar for cherries;
  • - 36 pcs. cherries with tails;
  • - 1 tbsp. a spoonful of lemon juice;
  • - a pinch of salt, a little lemon zest, baking powder.

Instructions

Step 1

Put 2 tablespoons of sugar in a small saucepan, pour in the lemon juice and port, heat the mixture, put the washed cherries in it, bring to a boil and turn off the heat. Leave the cherries to cool in a saucepan, covered.

Step 2

Beat the softened butter with sugar until a frothy mass, add eggs one at a time. Then add yogurt, starch, vanilla sugar, oatmeal, baking powder, a pinch of salt and lemon zest to taste. Instead of yogurt, you can take low-fat sour cream, but it should not be liquid. Mix everything until smooth.

Step 3

Transfer a third of the resulting dough to a separate bowl, add cocoa powder to it, mix. Divide the dark dough into the tins and line them with paper muffin tins. Spread the light dough over the dark dough.

Step 4

Place the molds with the dough in the oven at 200 degrees Celsius. Bake for about 30 minutes, but be guided by your oven and the size of the tins. Remove the molds from the oven and cool the muffins.

Step 5

Remove the muffins from the molds and place three cherries on top of each muffin. Serve yoghurt muffins with port marinated cherries for tea immediately. The next day, the dough becomes a little dry, so it is better not to bake a week's supply of muffins.
