Chicken satsivi is a Georgian dish seasoned with various spices and walnuts. It turns out delicious and juicy.
It is necessary
- - 1 kg of chicken
- - 1 onion head
- - 1.5 cups chopped walnuts
- - 1 tsp seasonings hops-suneli
- - 2 tbsp. flour
- - 1 tbsp. wine vinegar
- - 1 tbsp. butter
- - 1 tsp ground coriander
- - a pinch of saffron
- - 2 cloves of garlic
- - a bunch of cilantro
- - salt and red pepper to taste
Instructions
Step 1
First, rinse the chicken and remove excess fat. Put it in a saucepan, cover with hot water, put on medium heat and cook for 30 minutes.
Step 2
Remove the chicken from the broth, but do not pour it out. Grease the meat with ½ tbsp. butter, salt and fry in an oven preheated to 190 degrees, until cooked through, about 20-25 minutes. Remember to regularly turn the chicken over and pour over the melted fat.
Step 3
Now prepare the sauce. To do this, peel the onion and chop finely. Heat the remaining butter in a skillet and fry the onion in it for 5 minutes. Then gradually add the flour and cook for another 2 minutes. Pour into broth and mix thoroughly.
Step 4
Combine chopped walnuts, suneli hops, coriander, saffron, salt and pepper to taste

Pour the resulting mixture into a pan with fried onions and pour in the vinegar. Heat the sauce over low heat for 6-8 minutes, but do not simmer.
Step 6
Peel the chicken from skin and bones, cut the flesh into medium pieces. Add meat to sauce and heat for 7 minutes.
Step 7
Rinse and grind cilantro. Peel the garlic and crush, add to the cilantro satsivi. Let cool and place in refrigerator. Serve the appetizer cold.
