It is necessary
- For twelve servings:
- - 1 kg of ripe apricots;
- - 350 g of sugar;
- - 300 g of crackers;
- - 200 g of orange confiture;
- - 100 g of butter;
- - 1/8 liter of heavy cream;
- - zest from 1 lemon;
- - 6 tbsp. spoons of water.
Instructions
Step 1
Put the crackers in a bag, grind them with a mortar into crumbs. In a large saucepan, mash the butter with 200 g of sugar, caramelize until light brown, stirring constantly. Add crackers, pour in heavy cream, cook until you get a creamy mass.
Step 2
Line the form with parchment paper. Pour the cream into it, place the mold in the oven for 10 minutes, cook at 200 degrees. Chill the crust without removing it from the mold. Mix orange confiture (you can take jam) with grated lemon zest, spread the crust with this mass.
Step 3
Pour boiling water over the apricots, peel them off, cut in half, remove the seeds. Then place the apricots, cut down, close to each other on the base of the cake.
Step 4
Boil the remaining sugar with the addition of water until a thick syrup, as soon as it begins to caramelize, lay it crosswise on top of the apricots. After that, immediately serve the finished apricot cake with a sugar rack on the table, as its base will soften very quickly. With this cake, you can serve whipped cream or sour cream whipped with vanilla sugar separately.
