To prepare a herring snack with cranberries in wine vinegar, you will need:

- slightly salted herring 500 g;

- red onions 100 g;

- cranberries 200 g;

- red wine vinegar 200 ml;

- water 200 ml;

- sugar 40 g;

- basil 20 g;

- watercress 10 g.

It is better to use Norwegian chilled herring, as its flavor is most pronounced. First, you need to separate the herring fillets from the bones, looking carefully so that they do not remain there. Then the fillets must be rinsed in cold water and dried. Cut into small cubes or slices using a sharp knife to prevent the fillets from tearing.

Peel the onion until fresh feathers and cut into small cubes.

Herring marinade is made with cranberries, red wine vinegar (you can substitute sherry vinegar), water, sugar and thyme (basil would be an ideal substitute). It is advisable to wipe the cranberries or ceiling, a few small berries can be left untouched. Dissolve sugar in water, add wine vinegar and chopped thyme, and then combine this mixture with mashed cranberries.

Pour the cooked marinade over the fish and leave to marinate for 1 hour. When the fish is ready, together with the marinade, you need to arrange it in glasses, garnish with watercress or any other herbs and serve.
