Lentil Stuffed Zucchini is a hearty, delicious and gourmet snack. It can be consumed both hot and cold. Meat lovers can add minced meat to the zucchini, as well as garlic if desired.
It is necessary
- - 1 zucchini
- - onion
- - 1 carrot
- - 2 tomatoes
- -1-2 cloves of garlic
- - 70 g cheese
- - 5 tbsp. l. green lentils
- - salt to taste
Instructions
Step 1
Place the well-washed lentils in boiling salted water and cook for 10-15 minutes, until tender.
Step 2
Cut the zucchini in half lengthwise, scoop out the core with a teaspoon.
Step 3
Dip the zucchini in a pot of boiling salted water and cook for 3-5 minutes. Throw in a colander.
Step 4
Cut the carrots into strips. Finely chop the zucchini pulp, garlic, onion, tomatoes.
Step 5
Saute the garlic, onion and carrots over medium heat. Add the tomatoes, zucchini pulp, cover and simmer for another 5 minutes. Combine with lentils and salt to taste.
Step 6
Place prepared mixture in zucchini halves. Sprinkle with cheese on top.
Step 7
Place in an oven preheated to 200 degrees and bake for 10-15 minutes.
