This cheesecake has an unusually fresh and berry flavor. A waffle crust, two types of berry cream and a chocolate top - it is impossible to refuse a piece of such a delicacy.

It is necessary

  • For the cake:
  • - 250 g vanilla waffles;
  • - 80 g of butter;
  • - zest from 1 lemon.
  • For strawberry cream:
  • - 600 g of strawberries;
  • - 300 g of Philadelphia cheese;
  • - 200 ml fat cream;
  • - 50 ml of red grape juice;
  • - 15 g of gelatin;
  • - 4 tbsp. tablespoons of sugar;
  • - 1 pack of cream fixer.
  • For blueberry cream:
  • - 400 g blueberries;
  • - 300 g of Philadelphia cheese;
  • - 200 ml fat cream;
  • - 50 ml of red grape juice;
  • - 15 g of gelatin;
  • - 3 tbsp. tablespoons of sugar;
  • - 1 pack of cream fixer.
  • For the top of the cheesecake:
  • - 200 ml whipping cream;
  • - 150 g of white chocolate;
  • - cream fixer.

Instructions

Step 1

Grind the waffles into small crumbs, mix with softened butter and grated lemon zest. Cover the bottom of the springform pan with baking paper, spread the waffle crumbs, bake for 10 minutes at 180 degrees. Cool the resulting crust and gently transfer to a plate. Place a split ring around the cake.

Step 2

Put the thawed strawberries in a colander so that all the moisture is glass, do the same separately and with blueberries. Prepare blueberry and strawberry cream in different containers: beat the berries with sugar, add Philadelphia cheese, mix until smooth. Whip the cream with a fixative, add 200 ml of cream to both creams.

Step 3

Soak gelatin in cold water. Heat the grape juice, dissolve the gelatin in it. Send heated gelatin to both creams, stir. Pour the strawberry cream onto the crust and refrigerate to freeze the top a little. Then pour the blueberry on top of the strawberry cream and refrigerate for a couple of hours.

Step 4

Melt white chocolate with 50 ml of cream in a water bath, let cool. Combine this mixture with 150 ml of whipped cream. Smooth the resulting mass over the cream, put in the refrigerator overnight.

Step 5

Remove the white chocolate-covered strawberry-blueberry cheesecake from the refrigerator, remove the split ring and serve.
