Hearty vegetable and pumpkin soup can be made for the whole family in less than 1 hour. It is hearty, rich in vitamins and has a delicious pumpkin flavor.
It is necessary
- -2 tsp olive oil
- -1 medium onion
- -2 cloves of garlic
- -1 carrots
- -1 stalk of celery
- -1/4 tsp dried chili
- -1/2 tsp dried thyme
- -1/4 teaspoon salt
- -1 tablespoon tomato paste
- -400 grams of pumpkin
- -2 cups cauliflower
- -5 cups chicken or vegetable broth
- -3/4 glass of water
- -2 bay leaves
- -1/4 cup chopped parsley
- -salt and pepper to taste
Instructions
Step 1
Heat olive oil in a large saucepan over medium heat.
Step 2
Add the onion to the olive oil and fry until golden brown.
Step 3
Add garlic, carrots, celery, chili (optional), thyme and salt to the onion. Cook for about 5 minutes, until vegetables are tender.
Step 4
After, add tomato paste and mix thoroughly.
Step 5
Place nuts, cauliflower, vegetable broth, pumpkin, water, and bay leaf in a saucepan. Bring to a boil, then reduce heat and cover. Simmer everything for 15 to 20 minutes, until the zucchini and cauliflower are tender.
Step 6
Remove soup from heat and cool. Serve slightly cool with a sprig of parsley and sour cream. Bon Appetit!
