Ingredients:

  • Beef (pulp) - 800 g;
  • Pork (fatty pulp) - 800 g;
  • White bread - 250 g;
  • Garlic - 10 cloves;
  • Onions - 120 g;
  • Egg - 3 pcs;
  • Fresh tomatoes - 120 g;
  • Butter - 100 g;
  • Flour - 150 g;
  • Seasonings, ground pepper and salt;
  • Mineral water, carbonated - 300 g;
  • Corn oil - 100 g;
  • Milk - 150 g;
  • Table red wine - 150 g;
  • Prunes - 120 g;
  • Seedless raisins - 120 g;
  • White sugar sand - 80 g;
  • Bread crumbs - 100 g.

Preparation:

  1. Rinse boneless meat (both beef and pork) and cut into small pieces to rotate in a meat grinder. Place in prepared prep bowl.
  2. White bread (can be stale or croutons) soak in milk.
  3. Peel the garlic cloves, wash and put in a bowl with the meat.
  4. Peel the onion, as well as garlic, wash and cut into pieces so that it is convenient to twist with a meat grinder. Add to the meat bowl.
  5. Twist the prepared ingredients with a meat grinder 2 times. Mix the resulting minced meat.
  6. Add seasonings, salt, pepper and the contents of raw eggs to the resulting minced meat. Knead thoroughly.
  7. Wind small meatballs from minced meat. The weight of each should not exceed 15 g. Dip each in flour and lightly fry in corn oil in a saucepan. Transfer the fried meatballs to the prepared baking sheet.
  8. Cut the prunes into four parts and pour boiling water in your own jar or bowl, always made of glass. Add raisins to it. Leave them like this for 10 minutes.
  9. Put the tomatoes in boiling water for 2 minutes. Remove the skin from them in a thin layer and grind with a blender.
  10. Transfer the bread crumbs to a dry frying pan and fry for 2 minutes.
  11. Add tomatoes chopped with a blender and sparkling mineral water to the breadcrumbs. Boil for 5 minutes under a lid that fits tightly to the pan.
  12. Drain the raisins and prunes and add them to the skillet where the rusks and tomatoes are boiled.
  13. Add wine, sugar and spices here. Top and salt the sauce. Boil for another 5 minutes.
  14. Pour meatballs on a baking sheet with hot sauce and place in a preheated oven for 35 minutes. They go well with mashed potatoes.
