Step 1
Cut onions, carrots, zucchini and bell peppers into small cubes. Chop the garlic and fry in a little olive oil. Put the cooked garlic in a separate container, and in the remaining oil, lightly fry the vegetables and onions. Season the mixture with salt and pepper to taste.

Cook the rice separately until cooked, and then fry it in olive oil for 5-6 minutes to soak the grains. Add garlic, rice and 2 cups of water to the fried vegetables. You can use vegetable broth. Cover the pilaf and simmer over low heat for 5-7 minutes.
