It takes a minimum of effort and the ingredients available to make this cake. The pie turns out to be airy, with a velvety texture. Coffee gives a pleasant flavor, while blueberries go well with a moderate sweetness of the dough.
It is necessary
- - 250 g flour;
- - 150 g blueberries;
- - 150 g of sugar;
- - 150 g margarine;
- - 130 g sour cream;
- - 2 eggs;
- - 2 tbsp. spoons of boiling water;
- - 3 teaspoons of instant coffee;
- - icing sugar, ground nutmeg, ground cinnamon, baking powder.
Instructions
Step 1
Whisk softened margarine with sugar and eggs until smooth and creamy. Add sour cream, stir until smooth. Add flour with baking powder, stir with a spatula. The dough should be thick enough.
Step 2
Dissolve coffee in boiling water, add to the dough, add cinnamon with ground nutmeg. Stir until smooth to form a coffee aromatic dough.
Step 3
Sort out fresh blueberries, rinse. Add to the dough, mix gently with a spatula - try not to crush the berries.
Step 4
Put the finished dough in a baking sheet lined with baking paper. Bake the blueberry coffee cake at 180 degrees for 35-40 minutes. Be guided by a dry wooden stick. During the cooking process, the cake rises strongly, after cooling it does not fall off.
Step 5
Transfer the warm cake to a platter and sprinkle with powdered sugar on top. Garnish with whole blueberries.
