Step 1

Tomato preparation

Tomatoes for this dish can be prepared in two ways, but the point is to extract the pulp and form a minced meat container from each tomato.

Method one: cut the tomatoes crosswise to about the middle, slightly open the quarters in different directions and pick out all the pulp with a spoon.

Method two: cut off the top of each tomato and select the pulp in the same way. These cut "lids" will need to be put back in place before baking. Such caps look especially impressive if the stalk has not been removed from them.

Step 2

Preparing the filling

Put the tomato pulp, chopped bell peppers and garlic, chopped parsley, salt, pepper, saffron into the blender bowl, add 2 tablespoons of olive oil and chop everything until smooth. Pour the mixture into a deep frying pan, add the washed raw rice, bring to a boil, and then simmer for 30 minutes under the lid, stirring constantly.

Step 3

Assembling the dish

Fill the tomatoes with the filling; if the "caps" were cut off, then put them on top. Put the tomatoes in a fireproof dish, pour over 1 tablespoon of olive oil, cover the dish with foil. Put in the oven, preheated to 200 degrees, and bake for 40-50 minutes.
