Pies have long been present on the Russian table. They were made with a variety of fillings: cabbage, mushrooms and, of course, fish. Today, such a dish is also popular, and there are a lot of recipes for its preparation. Even the fish filling in the pie can be different.
When you don't want to spend a lot of time making pies, it is better to make the dough for them on kefir. In this case, they will turn out to be very delicate and soft. Well, a variety of fish are suitable for the filling, but they are especially tasty with salmon or salmon. To make pies according to this recipe, you will need:
- 2 eggs;
- 500 ml of kefir;
- 1 teaspoon of baking soda;
- a pinch of salt;
- a pinch of granulated sugar;
- flour;
- 500 g fillet of salmon or salmon;
- a bunch of green onions;
- vegetable oil for frying.
First you need to prepare the filling. To do this, you need to wash and dry the fish fillets, add a little salt to it, wrap it in foil and put it in the oven for 20 minutes to bake it. Then cool to room temperature, cut into small pieces and mix with green onions.
To make the dough, beat the eggs, then mix with kefir, add sugar, salt and soda. Mix everything well and gradually add flour. When the mass is difficult to mix in a cup, it should be transferred to the table and add more flour as the dough takes. You don't need to put too much - the dough should not stick to your hands, but at the same time be soft enough.
Then the dough must be rolled out into several thick sausages, cut each into small pieces, and rolled into circles with a rolling pin. Put the filling in the middle of each and seal the edges. After that, the pies need to be fried in a pan with vegetable oil until golden brown.
It is not necessary to extinguish soda with vinegar - kefir will take over the role of the latter.
Fish pies made with yeast dough turn out to be no less tasty, although their preparation takes a little more time. For them it is necessary:
- 2 eggs;
- 1 bag of dry yeast;
- 300 ml of milk;
- 4 tbsp. tablespoons of sugar;
- a pinch of salt;
- 3, 5-4 glasses of flour;
- 2 cod;
- ½ cup rice;
- the head of an onion.
First, prepare the dough by mixing yeast, 6 tbsp. tablespoons of flour and sugar in a separate bowl. Then you need to pour warm milk into them and mix everything thoroughly so that there are no lumps. Place the dough in a warm, draft-free place for 15 minutes, so that it foams.
After the allotted time, you need to beat the eggs with salt in a cup and add everything to the dough. Then gradually add flour, kneading a soft dough. Cover it with a towel and let it sit for 40 minutes.
In the meantime, you should prepare the filling - boil the rice in salted water, and gut the cod, wash, separate the pulp from the bones and fry in vegetable oil. When the fish has cooled down a little, it needs to be finely chopped, mixed with rice and salt. Add chopped onion and mix well.
The finished dough must be rolled out into a sausage, cut into 25 pieces and each turned into a cake using a rolling pin. Put the filling in the middle of the cakes and mold the edges in any way. Put the finished pies on a baking sheet, greased with olive or sunflower oil, and put in an oven preheated to 180 ° C. Bake until golden brown.
During the cooking process, the oven should not be constantly opened to check the readiness of the pies - they may not turn out fluffy.
Ready hot pies should be greased with melted butter or yolk, wait 10 minutes, put on a plate and serve.
