    • 800 g of fish;
    • 2, 5–3 tsp. mustard;

    • 1 tbsp. l. flour;
    • 0.5 liters of water;
    • salt;
    • lemon juice;
    • greens.

Step 1

Prepare the fish. For this dish, cod, hake, halibut or sea bass are well suited.

Step 2

Gut the fish, cut off the fins, cut off the head and cut into portions. Season with salt.

If you are short on time, use a ready-made fillet. This will significantly shorten the cooking time.

Step 4

The most delicious mustard is home-made. Take dry mustard powder, sugar, vegetable oil and a pinch of salt.

Mix all ingredients and add boiled water or cucumber pickle. To make the mustard vigorous, they must be warm. Mix everything well and leave to brew for a day.

To diversify the taste, you can add garlic, black or red ground pepper, grated or twisted horseradish in a meat grinder, or crushed nuts to mustard.

Stir the mustard thoroughly before cooking. And if it turns out to be thick, then dilute it with warm boiled water to the desired consistency.

Grease each piece with mustard on both sides. Melt the butter in a saucepan. Add fish and fry until golden brown on both sides.

Now prepare the sauce in which the fish will be stewed. Peel the onion and chop it into small pieces. Fry it lightly in oil until clear. Then sprinkle with flour and cook for an additional five minutes.

Dilute the sautéed onions with hot water, bring to a boil. Season with salt, add freshly squeezed lemon juice to your liking. Instead, you can use citric acid diluted in a little water, or vinegar.

Pour the fried fish with onion sauce. Cover the saucepan with a lid and simmer over low heat for 15–20 minutes.

Step 12

Put the finished fish on a dish. Sprinkle generously with chopped herbs. Boiled potatoes or rice are suitable as a side dish.
