This wonderful drink owes its name to the Ethiopian province of Kaffa. It was from there that coffee began to spread throughout the world. This drink, like many other things, was brought to Russia by Tsar Peter I from Vienna, where many coffee houses were opened already at the end of the 17th century. True connoisseurs of coffee came up with various ways of making it. But they all agreed in one opinion - in order for coffee to give all its wonderful taste, it is better to roast and grind its beans just before preparation.

Instructions
Step 1
Choose coffee beans to grind and brew at home.
According to the degree of roasting, coffee is distinguished as a weak roast, or Scandinavian; middle - Viennese; dark - French and darkest - Italian roast. It is advisable to choose Scandinavian roasted beans. Then you will be able to roast the grains at home to the required degree, in accordance with the selected recipe.
For any roast, cook the beans in a skillet, always using the lowest heat setting. The degree of roasting will depend on the duration of the process. So, for medium roasts, keep the beans in a hot skillet for 5 minutes. For dark - from 7 to 12 minutes. Stir the coffee beans constantly while doing this. Let the roasted beans cool in the skillet.
Step 2
Next, grind the beans in a coffee grinder. With the help of a conventional electric coffee grinder, you can get fine, medium and coarse coffee in your home. In an industrial setting, they also produce ultrafine coffee, which looks like a powder.
The darkest roasted beans are suitable for making finely ground coffee. They are more fragile than the rest.
Turkish coffee is made from finely ground coffee. For this recipe, use 1-2 teaspoons of finely ground dark roasted coffee per 100 ml of hot water. Pour the powder into a Turk (it is also called a dzhezva), add 1 teaspoon of sugar, cover with hot water and put the Turk on low heat. After the coffee foam rises, remove from heat. Let the foam settle slightly. Repeat the process 2 times. After that, the coffee grounds should settle and the resulting drink can be poured into cups.
Step 3
It is recommended to prepare coarse and medium ground coffee from medium and dark roasted coffee.
Such coffee is perfectly suited for preparation in household electric coffee makers and in coffee pots.
When brewing in a pot, pour hot water over it. Pour in coffee at the rate of 1-2 tsp. per 100 ml of water. Pour boiling water over and let it brew for 5-10 minutes. Then pour into warmed coffee cups.
