Flounder in white wine will surprise you with its interesting taste, which is achieved through the use of wine and lemon juice. Such a dish can be served on a festive table. The flounder prepared in this way can be decorated with oysters, mushrooms, mussels.
It is necessary
- - 1 flounder (weight 250-280 g);
- - 1 medium onion;
- - 3 tbsp. spoons of white wine;
- - 6 tbsp. spoons of hot water;
- - 2 tbsp. spoons of oil;
- - juice from 1 lemon;
- - 2 egg yolks;
- - 3 sprigs of parsley;
- - a pinch of salt, pepper.
Instructions
Step 1
Place onion slices and fresh parsley on a fireproof dish. Prepare the flounder (rinse, gut), put on a dish. Add salt, white wine, hot water, pepper, 1 tbsp. a spoonful of oil, lemon juice.
Step 2
Cover with a lid and bake in a moderately heated oven. Transfer fish to a hot serving platter.
Step 3
Add a mixture of butter and flour to the juice remaining after cooking the fish.
Step 4
Boil for a few minutes, then remove from heat, add egg yolks mixed with 1 tbsp. a spoonful of sauce. Strain, pour over fish.
