    • 400 g salmon fillet;
    • 0.5 lemon;
    • 1, 5 tablespoons of vegetable oil;
    • 1, 5 parsley root;
    • 2 tablespoons of ground crackers;
    • frying oil;
    • For the sauce mayonnaise with gherkins:
    • 100 g gherkins;
    • 250 g mayonnaise;
    • a tablespoon of ketchup.

Step 1

Grilled salmon. Rinse fillets and pat dry. Then cut into portions. Sprinkle the salmon with pepper and salt. Zip in flour. Heat vegetable oil in a frying pan and fry the salmon in it alternately on both sides. Then, cook for ten minutes. Serve hot, garnish with sprigs of herbs, slices of peeled lemon or slices of pickled cucumber. For a side dish with fried salmon, boiled or fried potatoes, crumbly buckwheat porridge are suitable. Separately, you can serve tomato-sour cream sauce.

Tomato sour cream sauce. Peel the onion, chop finely and sauté in a saucepan with a tablespoon of oil and the same amount of flour. Add tomato paste, stir well and dilute with fish stock. Season with salt and simmer over low heat for eight to ten minutes. Then remove from heat, add sour cream and stir well.

Step 3

Pickled fried salmon. Wash and dry salmon fillets with a towel or napkin. Slice the length of the carcass into cubes about four by half a centimeter and place in a ceramic bowl. Squeeze the juice from half a lemon, mix with vegetable oil and pour over the fish. Wash and finely chop the parsley and add to the salmon. Salt and pepper, mix thoroughly and put in the refrigerator for thirty minutes to marinate. Then roll the pickled salmon cubes in the ground breadcrumbs. Heat vegetable oil in a skillet and fry the fish in it. Fold the finished pieces of salmon on a platter in the form of a well. Serve the mayonnaise and gherkin sauce separately.

Mayonnaise sauce with gherkins. Peel and seed gherkins or other small pickles. Cut into small cubes and squeeze lightly. Put a tablespoon of ketchup and gherkins in the prepared Provencal mayonnaise. And mix thoroughly until smooth.
