If you make cottage cheese yourself on milk, then to determine the percentage of fat in the future cottage cheese, weigh the milk and calculate the amount of fat by its weight. If the fat content of the milk is unknown, then proceed as follows. Whole milk contains from 3.2% fat or more. Take a tall and narrow glass, pour milk to a height of 10 cm, measuring strictly with a ruler. After 5-6 hours, the cream will separate from the milk, take the same ruler and measure the height of the cream. Each millimeter of cream is equal to 1 percent of the fat content of the milk.
Step 2
Make curd from milk. Weigh the resulting curd mass. Calculate the percentage of fat in the curd according to the scheme:
N2 = N1 * A / B, where
N1 - milk fat (percentage);
N2 - fat content of cottage cheese (percentage);
A is the weight of milk;
B is the weight of the curd.
Step 3
From one volume of milk, half as much cottage cheese is obtained, but the percentage of fat content in the cottage cheese doubles. Thus, if you have 1 liter of milk, then you will get only 500 grams from it. cottage cheese. If the milk was 3 percent, the curd would be 6 percent, and so on. This scheme is suitable if the initial fat content of the milk is known.
