Such a simple procedure as boiling fresh shrimps sometimes does not always work. Shrimps lose their taste, become tough and cannot be saved by any sauce or seasoning. In fact, in order to get a tasty product, it is enough to follow only three basic rules.

- - a bowl of ice water with ice;
- - skimmer.

Step 1
Always immerse shrimp in boiling water only! One kilogram of peeled shrimp requires two liters of liquid. You can cook shrimp in salted water, you can add ½ lemon or lime juice to every liter of water. The citrus juice will fight off the intense fishy odor. Also, if you want a little sweet shrimp, you can boil them in beer. You can put bay leaves, dill, black peppercorns in boiling water. Shrimps are more fragrant if you put a gauze bag with shrimp shells in boiling water a few minutes before putting the shrimps in it.
Step 2
Using a slotted spoon, place the peeled shrimp in boiling water. Try to include as many shrimp as possible at the same time. If you need more than two or three passes to put in all the shrimp you have, it is better then to boil them not at one time, but in batches.
Step 3
Boil the shrimp strictly on time! Do not leave the shrimp unattended. They cook very quickly. Once the shrimp are pink and opaque, they are done. Large, king prawns are usually cooked for about three minutes, medium prawns are ready in two minutes, and small prawns are sometimes cooked through in less than a minute.
Step 4
Chill the shrimp immediately after cooking! Before placing the shrimp in boiling water, prepare a bowl of cold water and ice. As soon as the shrimps are cooked, take them out of the boiling water with a slotted spoon and put them in this bowl. Thus, you will be able to instantly stop the cooking process and they will not be overcooked. Leave the shrimp in ice water for 2-3 minutes.
Step 5
If you do not plan to add shrimp to any dishes immediately after you cook them, then you can boil them right in the shell. The procedure will be the same, but you will need to be more careful about the time and rely on it, rather than on the appearance of the product. Note that raw shrimp are easier to peel than boiled shrimp.
