    • 75 g granulated sugar;
    • 2 egg yolks;
    • 150 g butter;

Step 1

Make butter cream. To do this, pour cold water into a small saucepan, place on the stove, and bring to a boil. Remove the saucepan from the stove and add granulated sugar in a thin stream. Put back on fire and heat gently until sugar is completely dissolved. Add more heat and simmer until syrupy.

Step 2

Take eggs. Separate the yolks from the whites using a special tool. Beat the egg yolks in a separate container, slowly pour in the prepared sugar syrup in a thin stream. Beat continuously until the mixture becomes thick and light. Cool the mixture.

Step 3

Whisk the butter separately in another bowl until tender. Gently add the egg mixture to it and beat well. Add some vanillin or rum and stir gently. You can add fruit essence. Place the cream in the refrigerator to cool slightly.

Step 4

Make roses from the prepared cream. For the flower itself, add pink, red, or yellow food coloring to the cream. Take a special pastry nail for making flowers. Put some cream on it and attach a piece of paper to it. Apply a drop of cream on top of the piece of paper again.

Step 5

Take a pastry syringe and place it at an angle. Squeeze out the cream by gently turning the nail counterclockwise. When you make a full turn of the nail, you get the middle of the rose. Also do the second row, only extrude three petals. Use not the whole circle, only 1/3. Make each petal separately each time, tear off the nozzle and start over. Hold the nozzle with a narrow angle downward.

Put the finished flowers in the freezer for 1 hour. It is easier to decorate various products with frozen roses, they will not melt.

Attach roses to the cake, squeeze out the leaves. Add green dye to the cream. Take the syringe and hold it so that the nozzle looks like a bird's beak. Squeeze the leaves from the base of the rose. Make them different sizes.
