    • sour cream - 1 glass;
    • granulated sugar - 1, 5 cups;
    • flour - 1, 5 cups;
    • lemon - 1 pc;
    • baking powder - 1 tsp;

Step 1

Beat eggs with one glass of granulated sugar using a mixer until smooth. Add sour cream and baking powder there. If you don't have baking powder, then you can use soda quenched with vinegar. Pour 0.5 teaspoon of baking soda into a tablespoon and add a little 9% vinegar. A white foam will form, which will replace the baking powder. Mix everything again with a mixer. Add flour and zest of half a lemon. Stir everything until smooth. The consistency of the resulting dough should be similar to thick sour cream.

Lubricate the springform pan with refined vegetable oil and sprinkle with flour inside. Pour the dough into it and place in the oven to cook at 180-200̊ for 30-40 minutes. Readiness can be checked as follows. Stick a toothpick into the pie, if after you take it out, it is dry - the pie is ready.

Step 3

While the pie is in the oven, squeeze the juice out of the lemon. In order to get more juice, pour boiling water over the lemon.

If you don't have a dedicated citrus juicer, you can squeeze lemon juice using a regular tablespoon. Just roll the spoon inside the lemon over a clean bowl to drain the juice. Mix the remaining sugar (1/2 cup) with the lemon juice until completely dissolved. This will be the soak for the cake.

Step 4

Remove the finished cake from the mold. Let cool slightly. Use a toothpick or a match to poke as many small holes as possible in it from the bottom side. Gently pour the lemon soak over the cake. After the cake is completely saturated, it can be served with tea or coffee.
