Step 1

Finely break the chocolate bar and melt in a water bath. Now pour the melted chocolate into any container and chill it in the freezer. It is necessary to cool the chocolate for a sufficiently long time until the mass begins to harden. Then heat the chocolate again to operating temperature with vigorous stirring. The working temperature for milk chocolate is 30-32 degrees, and for white chocolate - 28-30 degrees. These actions are necessary in order for the future product to acquire a pleasant shine, hardness and fragility. Chocolate prepared in this way will have a uniform texture, pleasant aroma and a long shelf life.

Step 2

Make figurines using special chocolate molds. You can buy them in crockery stores, pastry supermarkets, and various online stores offering goods for pastry chefs. Wipe the mold thoroughly with a towel, paying attention to all the curves and small indentations.

Step 3

Gently fill the mold with chocolate without adding all the way to the top. Slowly tap the mold on the table so that all the air comes out and the chocolate is evenly distributed over all the grooves. To make sure that there are no air bubbles inside the figurine, lift the mold and look at the bottom of the product.

Place the filled molds in the refrigerator. The setting time depends on the size of the figurine. On average, it takes 10-30 minutes. To make sure the chocolate is completely frozen, look at the bottom of the mold. The color should be uniform. There should be no silvery stripes and shadows on the figure.

Place a clean towel on the table. Turn the form over and gently tap it on the table. The figures will drop out onto the towel.
