From German and Italian, the word "marzipan" is translated as "March bread", and it is not in vain - products made from marzipan mass are as common in these countries as bread is. But in Russia, for a long time, the filling for buns made of crushed nuts with sugar was called marzipan, which, of course, is an unfair delusion.
It is necessary
-
- almonds - 3 cups;
- water - 1 glass;
- sugar - 2 cups;
- icing sugar - 4 tablespoons;
- food colorings;
- vegetable oil;
- a few drops of honey.
Instructions
Step 1
Heat the water in a saucepan. Add sugar, stir until completely dissolved. Bring the syrup to a boil and let it simmer for a couple of minutes. Remove the saucepan from heat and beat the mixture until the syrup is cloudy.
Step 2
Peel the almonds. To do this, put it in a bowl and pour boiling water over it. Leave it on for 10 minutes. Then fill with cold water. Now the nuts will peel easily. Dry and grind them in a coffee grinder. Add to sugar syrup, mix thoroughly, put on fire and cook for 2-3 minutes. Then put the mixture on a surface sprinkled with powdered sugar and knead the marzipan mass.
Step 3
Divide the mass into several pieces. To dye marzipan in the desired color, make a small depression in the piece, add the dye there and knead it thoroughly. It is better to use natural dyes for this, for example, beetroot or berry juice.
Step 4
From marzipan mass, you mold any figures, like from plasticine. Marzipan dries up rather quickly, so wrap the mass that you do not use with plastic, and if it does dry out, moisten your hands with water. Glue the small details of the figures to each other with a drop of honey.
Step 5
You can also use ready-made molds for making cake decorations. Lubricate such a mold with vegetable oil, take a piece of marzipan mass, fill the mold with it and tamp it well. Then turn the mold over and hit it sharply on the table - the marzipan will separate from it.
Step 6
Sprinkle the finished figurines with icing sugar. For storage, wrap them in parchment paper and place them in a box with a tight-fitting lid.
Step 7
There is another way to color the figures. In a cup, mix a few tablespoons of clear liquor (such as grappa) and add liquid food coloring, drop by drop. Prepare several of these dyes according to the number of desired colors and paint the ready-made marzipan figures with a thin brush. After that, let the figurines dry and cover with sugar icing on top.
